Tilly Bagel Shop, launched by Hannah Tillett and Mike Banaszak, rapidly garnered attention following its opening in August 2023, necessitating the hiring of a "bagel bouncer" due to overwhelming demand. The couple previously sold their hand-rolled sourdough bagels via Instagram and pop-ups. To accommodate growing popularity, they will open a second location in Fulton Market in April 2024. Tillett's unique sourdough starter, integral to their bagelsâ distinctive Chicago-style flavor, has allowed them to stand out in a market dominated by others attempting to replicate New York-style bagels.
The demand was higher than we could have ever anticipated. That space was designed for a quarter of the number of people that walk through that door every day.

Tilly Bagel Shop Fulton Market is scheduled to open on Saturday, April 26, and with 600 more square feet than its South Loop sibling.
Positive feedback encouraged Tillet and Banaszak to begin selling the bagels.
