Esme Chef Jenner Tomaska Is Planning a 'Midwest Bistro' for Old Town

In 2025, Jenner Tomaska, chef of Michelin-starred Esme, will launch two new dining ventures: a steakhouse named Alston and a French bistro, Petite Edith. Situated in a 27-story luxury apartment tower in Old Town, the bistro aims to offer a casual yet eclectic dining experience that blends Midwest influences with Tomaska's creative culinary style, moving away from traditional French fare. With an emphasis on seafood and local produce, Petite Edith is expected to invite guests into a comfortable setting with outdoor seating and a capacity of 80, challenging conventional bistro norms.
"I've always wanted to open a bistro," Tomaska says. French cooking remains Tomaska's favorite, but the acclaimed chef warns that Petite Edith will serve the unexpected: "It's not going to be your typical steak frites and escargot."
Expect lots of seafood in a modern bistro setting with an emphasis on local produce. It sounds similar to the approach Joe Frillman and company have taken with Daisies."
The restaurant will be located inside a 27-story luxury apartment tower built in July 2024, showcasing Tomaska's unique style of cooking in a less formal setting.
