Pistachio farming is on the rise in drought-prone California

Pistachios have surged over the past decade to become California's sixth-biggest agricultural commodity, surpassing traditional staples like strawberries and tomatoes.
"There has been an explosion over the last 10 or 15 years of plantings, and those trees are coming online," said Zachary Fraser, highlighting the rapid growth of the pistachio industry.
Much of the crop is headed to China, where it is a popular treat during Lunar New Year, showing the international demand for the nut.
The Wonderful Co. has ramped up pistachio production significantly since 2015, utilizing a new rootstock that increases yield by 40% more nuts.
