The partners opened Capriotti's franchises while keeping day jobs and planned a 50/50 ownership structure. They initially launched multiple locations, later purchased the entire business, and focused on expansion and operations. Since 2008, they scaled Capriotti's from roughly 40 locations to more than 170 through franchising and systematic growth driven by their partnership and commitment to the brand.
