London Chase, debuting as an executive chef, opens Mango Bay in NYC, blending American and Caribbean flavors. He focuses on dishes like oxtail and jerk chicken, enhancing them with precision and freshness. Located in a Fort Greene brownstone, the restaurant reflects Chase's cultural background, with decor celebrating local art and Caribbean heritage. Chase aims for the menu to resonate with traditional Caribbean communities while making fine dining more accessible. His passion project embodies both personal history and a fusion of culinary influences from his life between French Guiana and London.
"A lot of what Afro-Caribbean fine dining has to be approachable for traditional Caribbean people," said Chase.
"This is my passion project," Chase told BK Reader.

The Mango "Madam" is idolized through a large painting on the restaurant's second floor.
