Dr Catarina Rendeiro, Assistant Professor in Nutritional Sciences at the University of Birmingham, and leading author explained that when stressed, people tend to choose high-fat foods, which can impair vascular recovery from stress. This study sought to determine if adding high-flavanol cocoa to a fatty meal would shoulder some negative impacts on the body under stress.
Rosalind Baynham, first author on the paper, remarked that flavanols found in fruits, vegetables, and unprocessed cocoa have beneficial health properties, particularly in regulating blood pressure and protecting cardiovascular health.
