The Salty Donut began as a passion project between couple Amanda Pizarro and Andy Rodriguez who decided to embark on a pop-up donut and coffee business in their native Miami while they were still in college.
The Berliner donut, a round, jam-filled doughnut, is made from lightly sweet yeast dough and is typically finished with powdered sugar or icing. Traditional fillings include jam or citrusy marmalade, while modern versions may use cream or chocolate.
"We're bringing our childhood memories to the table, and now people are paying attention," said Erick Rocha, pastry chef at Corima in Manhattan and the all-day cafe Vato, in Park Slope, Brooklyn, where conchas regularly sell out.

It's hard to pin down just what category of dessert this bakery item falls under, but that's part of its allure. One Redditor proclaimed that it's "seriously a very unique pastry ... Is it a croissant? ... Is it a muffin? ... Cheesecake? ... Positively incredible, could[n't] recommend more highly."
As we mentioned in our review, these hot, bite-sized treats "look like an egg roll from the outside, which is fine." Although more importantly, surpassing the advertised cheesecake, this dessert delivers "just mouthfuls of crisp breading," with any filling therein distributed unevenly or (as was our experience) stuffed into one end of the log: "This dessert is mainly the crispy roll with a nominal amount of tangy cheesecake filling and even less caramel."
There is something inherently comforting about a bakery. Walking past one early in the morning, breathing in that warm, sweet scent, can bring back memories of childhood or at least provide some solace on a cold day.
