
"Seabird, meanwhile, is one of Time Out's best rooftop restaurants in London. The residency will see Seabird feature a select list of natural wines direct from Bar Brutal's own bodega-turned-wine-bar to pair alongside seasonal Spanish plates. Inspired by Brutal's origins, the seasonal menu will feature The Cellar Pardas - Rupestris 2023 (white), Terroir al Límit - Historic 2022 (red) and an Escoda Sanuhuja - Bassotets 2022 (orange) from their five-starred Can Cisa cellar in Barcelona's El Born."
"On the food side of things, punters will get to choose from a menu that includes smoky fish, buttery jamón ibérico, seasonal vegetables and specialty desserts. If wine doesn't strike your fancy, however, three whiskey cocktails named the 'Stout Old Fashioned', 'Smokey Rob Roy' and 'Not a Hot Toddy' will be available to pair equally with your choice of food. The drinks are a collab with Monkey Shoulder whiskey."
Bar Brutal, a Barcelona bodega-turned-wine-bar that pioneered Spain's natural wine movement and curates over 300 wines, will stage a limited pop-up residency at Seabird, the rooftop bar of The Hoxton Southwark, opening October 2. Seabird will feature a select list of Bar Brutal's natural wines including The Cellar Pardas - Rupestris 2023, Terroir al Límit - Historic 2022 and Escoda Sanuhuja - Bassotets 2022 from Can Cisa in El Born. A seasonal Spanish menu will pair smoky fish, jamón ibérico, vegetables and specialty desserts. Three whiskey cocktails created with Monkey Shoulder will also be available. The interior will be redesigned to evoke a candle-lit Spanish cellar.
