In their native land, coffee plants typically grow in the understory of tropical forests. It's no wonder people initially cultivated the plants in the shade, thus recreating their natural environment.
A little more managed polycultures created 'coffee gardens' in the forest, maintaining or adding useful plants like food crops or medicinals. Commercial polycultures emerged too, mirroring the forest but planting coffee under useful trees like rubber and cedar.
