Soba Dining Sora, the first U.S. location of the major Japanese noodle restaurant, will open in Japantown, San Francisco, in July 2025. Located at the former Aloha Warehouse, it will feature rustic noodle dishes, including imported buckwheat noodles served with traditional accompaniments. The restaurant aims to provide a relaxed dining experience, replicating chef Masao Kuribara's success in Japan. This opening represents an important expansion for the Sasala Dining group, which includes the renowned Hinodeya Ramen chain, popular in Japan and steadily growing in the U.S.
"Finally we can open Soba in Japantown," Yonekura says. "We're so excited." This opening marks a significant expansion for the restaurant group.
The main star of the restaurant is the rustic noodle dishes, paired with just-ground sesame seeds, ginger, wasabi, and broth.

Hinodeya, opened in 1885, slowly transformed into a significant player in the U.S. market after rebranding to Sasala in 2008.
