Not fancy. Not fast. Just good ole Texas barbeque.
Briefly

Leonard Botello IV, the pitmaster at Truth BBQ in Houston, believes that central Texas barbecue represents the pinnacle of barbecue art, distinguishing itself through its unique, low-and-slow cooking process. He explains that every cooking session is different, requiring him to adapt throughout the 16-hour cooking duration. The Houston location is an expansion from the original restaurant in Brenham, which celebrated its ten-year anniversary. Botello’s commitment to quality and the evolution of barbecue reflects a deep passion for the culinary craft.
"Truth BBQ - I would say it's the evolution of the purest form of central Texas barbecue," Botello said.
"Even though I'm doing the same thing over and over again, it's completely different each time I do it," Botello said.
"It's not like we are turning on a stove and following a certain recipe day after day. We are literally having to pivot throughout the day on a 16-hour cook."
