Trino, a new steakhouse in the West Loop, is set to replace the Japanese restaurant Komo and is led by chef Stephen Sandoval. Inspired by Sandoval's ties to Northern Mexico, Galicia, and live-fire cooking experiences in Argentina, Trino will celebrate both regional flavors and classic Chicago steakhouse traditions. The restaurant will feature a cozy speakeasy-style bar called Laberinto and will introduce itself to the public through pop-ups hosted at Soho House. Key dishes will include unique takes on steakhouse favorites, with a focus on quality ingredients and traditional techniques.
Trino was always in the books but, like Diego, it came about unexpectedly. The universe works in crazy ways.

To introduce the public to Trino, Soho House will host six pop-ups from June 20 to June 28.
Dinner rolls are served with a sweet-and-fatty browned butter on the side.
