The Katz's collaboration has been many years in the making. We were thinking about how you introduce people to the idea of vegetables at the center of the plate, thinking about iconic New York dishes, and Katz's was at the top of that list.
Every time we roasted the beets, it was like the most umami, meaty, rich vegetable. You can treat it like meat, and then we started curing it like pastrami and ... I got Katz's actual pastrami spices.
