The silver-stripe round herring, found only in the warm waters of southern Japan, is most enjoyed fresh as kibinago sashimi, coiled artfully like chainmail.
This October, Japan House in London will showcase kibinago sashimi as part of the UK's first exhibition featuring sampuru, Japan's renowned food replicas.
Simon Wright notes that food replicas are a curiosity not seen elsewhere, highlighting their unique role in Japanese culture and the rarity of experiencing them outside Japan.
Sampuru, which started in the 1930s for restaurants, allows customers to see the dishes they might order, aiding decision-making for unfamiliar western-inspired menu items.
