When the late Ed Schoenfeld, a guru of all things involving Chinese cuisine, decided he wanted to reinvent the Chinese dining scene in New York, the result was RedFarm.
There's also Peking duck of course, which RedFarm reports was named as the best Peking duck in the world outside China by China's national broadcaster Central TV.
