"In the middle of dinner service on a Tuesday evening in the fall, Providence restaurant lost its power. About half of the guests had made it through to the end of their meal. Others were at various stages of the multi-course tasting menu. One couple had flown in from Germany just for the occasion. Another had traveled from China and was leaving the next morning."
"There was no time to think about lost revenues, or the hours of prep and execution that went into that night's menu. The staff, including co-owner Donato Poto and chef-owner Michael Cimarusti, quickly began calling other restaurants in the area, determined to find a home for each guest to spend the remainder of the evening. Could they get last-minute seats at Hayato, Kato, Funke, Mélisse or Meteora? Like Providence, many of these restaurants require months of planning for a reservation."
A power outage struck Providence during a Tuesday evening dinner service, leaving some guests mid-tasting and others finished. Staff, including co-owner Donato Poto and chef-owner Michael Cimarusti, immediately called nearby restaurants to find seats so each guest could spend the remainder of the evening. The team secured last-minute arrangements through requests and favors with high-end restaurants that commonly require months of advance reservations. Providence has maintained this level of hospitality for twenty years. In 2025 Providence earned three Michelin stars, a place on the World's 50 Best North America list, and continued recognition on prominent best-restaurant lists since 2013. The leadership team includes Tristan Aitchison, Kim Stodel, David Osenbach and Mac Daniel Dimla.
