The Three Gorges, a new Cantonese and Hubei restaurant located in Fitzrovia, marks a shift towards authentic regional Chinese cuisine in the UK. Established by Miss Li Zhang, it represents a departure from traditional, standardized Chinese dishes popularized in Western countries. As older generations of Chinese restaurateurs retire, newer establishments focus on regional specialties, exemplified by Chef Qian's background in Jiangsu and a commitment to quality ingredients. The restaurant's name pays homage to the scenic Yangtze River gorges, framing its culinary mission within a narrative of cultural authenticity and evolution.
Dishes such as sweet and sour pork, prawn toast, chicken chow mein and crispy seaweed became established as menu staples that became standardised and incredibly popular.
The Three Gorges is part of a small group of regional Chinese restaurants founded by Miss Li Zhang, who also has three branches of the Sichuan-inspired Sanxia Renjia.
The area was turned into the largest dam in the world by the Chinese government in the mid-1990s. It's a long way from the urban bustle of Goodge St.
Now we have the opening of The Three Gorges, an eighty-cover, three-floor high-end Cantonese and Hubei restaurant in Fitzrovia's Goodge St.
