
"It's really kind of special. They were actual dishes served at the Queen Mary. We went back to the archives and found decades of historical menus and recipes and the chef and culinary team really took a deep dive. When you're dining off the menu it's basically a meal you would have gotten back in the 30s."
"We found some dishes that could meet the modern palate and then we went back and found some culinary practices that they used on the ship and we duplicated them as close as possible. We recreated the Delmonico Salad, which is a pretty straight forward salad, however we went back and we found the actual recipe for the dressing that goes on it and we duplicated that in the same sort of style they made."
Queen Mary has launched a new dining experience at its upscale Chelsea Chowder House and Bar called Dining Through the Decades, featuring dishes recreated from the ship's nearly century-old historical archives. The culinary team researched decades of menus and recipes to authentically recreate meals guests would have experienced in the 1930s and other eras. Dishes include potage soup, lamb chop tourangelle, Ice Box Cake, and a meticulously recreated Delmonico Salad with its original dressing recipe. The rotating menu will showcase different decades throughout the year. Additionally, Queen Mary introduced Jubilee, a new quick-service spot offering coffee, tea, ice cream, and pastries, complementing the existing Midship Market grab-and-go concept.
