Los Angeles's New Cult-Favorite Ice Cream Comes From an Antico Nuovo Alum
"Chad kind of threw me into pastry. He asked, 'What should the dessert program be here?' And my response was ice cream, since it's the one thing I know I can do really well."
"He was the greatest guy, and we became fast friends. We spent 14 and 15 hours a day together. I miss him dearly."
"Past pint flavors include vegan coconut caramel, plum and ricotta, Rieger Farms peach, and pistachio brittle, with prices ranging from $18 to $23."
Bradley Ray, a Los Angeles chef, has introduced Henry's Secret Ice Cream, a small-batch ice cream brand. He began making ice cream for friends and family in March 2026. Ray previously worked at Antico Nuovo, where he developed his dessert skills. The ice cream is available for pre-order and pickup in West Hollywood, featuring unique flavors like vegan coconut caramel and milk and honey. The brand is named in memory of his friend Henry Molina, who passed away in 2022.
