Los Angeles's Best Regional Mexican Panaderia Opens a New Bakery in Compton

From its humble beginnings as a garage bakery in 2016, Estilo Pan Copala has grown into a beloved local establishment in Compton, known for its authentic Afromexicano pan dulces. Owners Anticeto 'Cheto' Polanco and Nolberta Bonilla have recently opened a permanent location, Pan Estilo Copala, after a two-year construction process. The bakery caters primarily to Afromexicanos from Costa Chica de Guerrero and has gained an enthusiastic following, offering unique pastries like Borrachitos and Bonilla's signature conchas. The couple expresses excitement at finally realizing their dream of a brick-and-mortar bakery.
Immigrants from Copala and other Afromexicano towns have been buying their pan dulces from the garage bakery, sometimes traveling from the far reaches of California and even from out-of-state.
Polanco and Bonilla are opening Pan Estilo Copala on Friday, February 7, serving their artisanal pan dulces and coffee drinks.
Over the last two years, we have been making bread for catering events and private events to cover the rent, says Bonilla.
We had to purchase all new NSF-approved appliances and have had to make many improvements to the space to pass inspections, says Polanco.
