Can Food Work as Medicine?

There is renewed interest in using food as preventive medicine, offering patients vegetables or entire meals to keep them healthier and resistant to disease. Yet, it has been challenging to prove the effectiveness of prescribing produce for better health outcomes.
Discussions around health benefits of individual foods like blueberries and kale abound, however, proving their efficacy remains a challenge. Blueberries are touted for their antioxidant properties while kale is considered a superfood packed with vitamin K and vitamin C.
