Paris's fine dining scene is being shaken up by a generation of immigrant chefs who are choosing to stay in the city and open their own ambitious restaurants, earning accolades such as Michelin stars.
Enrique Casarrubias, a Mexican chef, initially planned to return to Mexico after gaining culinary experience in Paris but was encouraged by his mentor to stay and open a unique Mexican fine dining restaurant in the city.
