"Ryan will also lead the kitchen at the new Moona, located at 750 Main St. in Cambridge. Originally from the North Shore, Ryan spent his career all across the country, working in kitchens in D.C. and Denver and learning from culinary icons like Claudia Fleming and Alon Shaya. Three years ago, he came back home to be closer to family."
Moona outgrew its current 1,000-square-foot space and will expand to a larger location at 750 Main St. in Cambridge expected to open later this year. The new space enables an expanded pantry and a broader menu that shifts from a daytime café serving breakfast, pastries, and coffee to a convivial dinner service. Night menus will focus on Levantine-inspired dishes that incorporate staple pantry items from the Levant alongside New England seasonal produce. Executive chef Scott Ryan will lead the kitchen; owner Mohamad Al-Zein is overseeing the expansion. Ryan has culinary experience in D.C., Denver, and mentorship under Claudia Fleming and Alon Shaya.
