This Working Life with Philip Hughes: 'As a chef, I like the instant results you get in this business - I'm impatient'
"The co-owner of Kin Dee and Four Bowls Catering chats about moving to Ireland from South Africa - and why his new restaurant will be keeping it simple"
"A South African chef, a Malaysian chef and a Thai chef try to renovate and open a restaurant in Dublin. It sounds like the start of a joke - but we don't know the punchline yet."
"We were all chefs in Indochine on Leeson Street. We were doing great, but, unfortunately, the place closed. When the lease came up, the three of us - with a partner, Arsen Hoxha, from The Little Kitchen two doors down - went for it."
A South African co-owner of Kin Dee and Four Bowls Catering relocated to Ireland and is opening a new, intentionally simple restaurant. Three chefs — South African, Malaysian and Thai — are collaborating to renovate and open a restaurant in Dublin. All three worked at Indochine on Leeson Street before that venue closed. When the lease became available the three, together with partner Arsen Hoxha from The Little Kitchen two doors down, secured the space. The restaurant concept emphasizes simplicity in food and operation while drawing on diverse culinary backgrounds.
