"Minute Rice was first produced by a man named Ataullah K. Ozai‐Durrani. The cousin of the king of Afghanistan, Ozai-Durrani originally came to the U.S. in 1923 to study petrochemistry. However, he quickly turned his intellect toward grains and began experimenting with rice in his kitchen. Eventually, as his tests and trials progressed, Ozai-Durrani enlisted the help of the Arkansas Rice Growers Cooperative to provide laboratory space."
Ataullah K. Ozai-Durrani developed precooked, dehydrated instant rice that dramatically shortened cooking time. He experimented with rice for nearly two decades and worked with the Arkansas Rice Growers Cooperative before demonstrating the product to General Foods Corporation in 1941. Minute Rice was commercialized after the successful demonstration and quickly became a major food trend. Instant rice undergoes additional preparation beyond threshing, winnowing, drying, and milling; precooking and dehydration enable rapid rehydration and short cooking times. The Minute Rice brand remains widely used for convenient meal preparation.
