I have some anxiety that people are going to say, 'Oh, he's a hypocrite,' but I know that the best way to continue to champion plant-based cooking is to let everyone participate around the table.
I believe that if the meal is delicious, we don't need to worry about it. I think people will buy into it. I think if we want to really push the envelope, this is the place where we have to do it.
