Lime Out launched a second solar-powered floating taco bar in Lindbergh Bay, St. Thomas, providing tacos, cocktails, and oceanfront views. Guests can arrive by yacht, dinghy, or shuttle pontoons such as the Taco Taxi, though swimming, kayaking, and paddleboarding are not permitted at the bar. The menu features Lime Out classics like Surf & Turf, Rum-Rib Pulled Pork, and Ceviche tacos, plus St. Thomas exclusives such as the Bless Up taco with jerk chicken and pineapple-mango-cilantro relish. Current hours run Sundays through Fridays with plans to expand to seven days. Operations emphasize minimal plastic use and biodegradable materials.
