Starbucks plans a major overhaul of its food menu to offer more protein-forward and gluten-free options alongside premium coffee. The company will launch a protein cold foam later this year containing 15–18 grams of protein and will reimagine baked goods to be more artisanal. Cold foam sales grew 23% year-over-year, and consumers have been adding protein powders or protein drinks to beverages. The global high-protein food market is projected to grow by $50.2 billion by 2028, and social media mentions of protein have increased by more than 10% year-over-year.
