John Vink reopened Sunnyvale's closed Armadillo Willy's as Empire Armadillo and will open a South San Jose location at 878 Blossom Hill Road in late November. Vink negotiated a bankruptcy court sale and a new lease, partnering with restaurant veteran Ousmane Barry. The menu combines Texas barbecue and New York-style deli sandwiches, with in-house brined pastrami, pit-smoked chicken, brisket plates and sandwiches as bestsellers and ribs second. Sides include spicy peanut slaw and cornbread muffins with honey cinnamon butter. A Southern-style banana pudding was adapted for West Coast palates. The area offers greater street visibility and heavy traffic.
