"My parents took me to a botanical garden for my birthday one year, and we got lunch at the small restaurant inside. It was a bit of a fancier place. For dessert, I got a lemon tart with blueberry compote. I took my first bite and... something happened. I felt like I saw the whole of the universe."
"The blueberry compote was the most delicious thing I'd ever had in my LIFE, and I begged our server to ask the chef WHY. Coriander seed. The chef had tossed in a bit of the ground stuff as he made the compote, on a lark. A year later, I was still thinking about this damn dessert, and I sent an email to the restaurant to tell them that their chef had changed my life. To this day, coriander always goes with blueberries. Hell, I put coriander in my blueberry yogurt."
My parents took me to a botanical garden for my birthday and we ate lunch at the small restaurant inside. The restaurant was a bit fancier, and for dessert I had a lemon tart with blueberry compote. On the first bite the compote produced an overwhelming sensation, described as feeling like seeing the whole universe. The compote’s extraordinary flavor came from a bit of ground coriander seed that the chef added on a lark. A year later the memory persisted and prompted a grateful email. Since then, coriander became a permanent pairing with blueberries in my cooking and yogurt.
