"The only thing that was on my mind was wrangling the existing businesses," Kadin says. "But when I looked at the space again, I was like, God, that corner is the best corner in all of Highland Park."
Bub and Grandma's Pizza opens September 4 in the former Town Pizza space in Highland Park, operating a takeout window at York Boulevard and North Avenue 51 and running limited hours since August 31. The menu centers on naturally-fermented sourdough slices, whole pies, salads, and other items inspired by Boston, New Haven, New York, and New Jersey styles. Owner Andy Kadin began baking a decade ago from his home for local restaurants and used Town's oven to bake dough prepared at his house. After Town closed in late 2024, Kadin moved the bakery's approach into a permanent pizza operation on a prominent corner.
