Keizo Shimamoto created the ramen burger after encountering fried ramen buns in Tokyo. His announcement of a one-time event at Smorgasburg sparked immense online interest, leading to an appearance on Good Morning America. Despite poor weather and equipment issues, the ramen burger sold out quickly, resulting in a residency and escalating sales in subsequent appearances. Shimamoto later opened Ramen Co. and Ramen Shack, expanding his offerings. He wanted to innovate based on his experiences and background, merging influences from Japanese cuisine and his upbringing in Los Angeles.
