Inside the reincarnation of Palo Alto's beloved sports bar
"Things are definitely different at 541 Ramona St., which was the plan for managing partner Guillaume Bienaime, general manager Nicholas DeLuca and executive chef Ben Robin all along. The Pro is calling this a "revival" of the former joint, with one message on every menu: "Come for the food, stay for the game." "We want people to want to come when there's no game on," Bienaime told SFGATE. Robin added, "We really wanted to take it in an upscaled direction, but keeping the idea of it and the value of it.""
"It's a rather big change, as The Old Pro was very much a college sports bar in every way: long bartop tables, beer towers and even a famous mechanical bull named Bucky - riding Bucky was a rite of passage for Stanford students and Peninsula sports fans who grew up nearby (like this reporter). But former owner Steve Sinchek (who died last May) told Bay Area News Group that the big group parties never came back after the COVID-19 pandemic, leading to the June 2022 closing."
The Pro opened at 541 Ramona St., replacing The Old Pro after more than three years closed and nearly half a century of operation. Managing partner Guillaume Bienaime, general manager Nicholas DeLuca and executive chef Ben Robin repositioned the space toward dining while maintaining a sports atmosphere and game-day draw. Menus carry the message “Come for the food, stay for the game.” The Old Pro had been known for long bartop tables, beer towers and a mechanical bull named Bucky. Declining large group business after the COVID-19 pandemic led to the June 2022 closure and a nearly two-year renovation.
