I thought, "How many people are going to be affected by this in our immediate community?" Our food banks are already stretched, and people are struggling. I thought, "I have a restaurant, I cook, and I feed people, so that's what we're going to do.""
Rebecca Coffin owns Hailey's Kitchen Cafe & Bakery in Windham, Maine. She learned restaurant work traveling around the US and returned to Maine to start a family and a business with her son. The bakery began after homeschooling her son and teaching him baking, money management, and selling goods at farmers' markets; Hailey's Kitchen opened in 2017. The cafe offers baked goods, pies, cakes, sandwiches, soups, avocado toast, bagels, smoothies, and frappes. In response to a government shutdown that would pause SNAP benefits, Coffin publicly offered free meals to those affected. The offer prompted an outpouring of community offers to help fund the meals.
