Hello Halloumi opened a brick-and-mortar bakery in the West Village serving rich, halloumi cheese-filled pastries inspired by Cyprus flavors. The bakery highlights halloumi's savory, salty and slightly tangy profile and its high melting point that preserves flavor when grilled, baked or fried. Founder Constantino Papadakis was born and raised in Cyprus, moved to New York for college, worked in hospitality and later joined finance and private equity. Papadakis used his finance and real estate experience to self-fund the venture without outside investors. Current offerings include bagel bites and sweet and savory pastries, with plans to add sandwiches and salads.
