Her beef and caramelized onion ragù transforms inexpensive chuck roast into meltingly tender shredded meat after a long braise with Marsala wine, caramelized onions, and aromatic vegetables. The sauce is accentuated with tomato paste and parmesan. The ragù is served over al dente paccheri and finished with additional parmesan. The dish echoes Pasta Genovese through its focus on onions and tubular pasta, but it adds tomatoes, dairy, and shredded meat unlike the traditional chunked-meat, tomato-free Genovese. Chuck roast appears in several of her recipes, including Bolognese.
