Compass Rose Is Reborn as Sook, an All-Day Cafe, Market, and Wine Bar
""The city is suffering right now," Previte says. "We want comfort and we want affordability.""
""A little of it was just the practicality of not having to create a new concept every single time," Previte says."
""She's like, 'You know what? I'm realizing my cohort of friends, who had this horrible thing happen to them unexpectedly, needs a place to gather,'" Previte says."
Rose Previte closed Compass Rose after 11 years and opened Sook in the same DC rowhouse as a more casual all-day cafe, market, and evening wine bar. Daytime offerings include pastries, coffee using Lost Sock Roasters beans, and inventive drinks like a fig-leaf latte and ginger-tamarind espresso tonic. Evening plates focus on playful comfort food such as grilled cheese, potato chip "nachos" with prosciutto and parm, and khachapuri served all day. Previte relocated Compass Rose to Los Angeles to open Maydan Market and partnered with Sashi Jayatileke to create an affordable neighborhood gathering place.
