Healthy Thanksgiving Recipe: Kale and Butternut Squash Stuffing

Step two In a large pot, warm 1 tablespoon of olive oil over medium heat. Add the sausage. Cook until browned, breaking up the meat with a wooden spoon. Add the butternut squash, leeks, salt and pepper. Cook until the leeks are soft, stirring occasionally. Add the kale, cover and cook for 4-5 minutes or until wilted.
Step five Add the stuffing to the prepared dishes and cook for 40 minutes or until lightly browned.
