The chewy caramels you get in a chocolate selection box have always been my favourite. Yes, they get stuck in your teeth, but that's all part of the fun.
Using festive spices such as cinnamon and nutmeg just adds to their buttery warmth. You will need a thermometer to make sure the mixture reaches the right temperature to set properly.
They come together quite quickly and look so pretty all wrapped up. The caramels will keep for up to a month in a cool, dry place.
Leave the caramel to cool for at least eight hours, or overnight, then use a sharp knife to cut into small pieces. Wrap in greaseproof paper before giving as gifts.
