The name, derived from the Korean word for 'mixing' and 'mate' for friend, reflects her intention to serve healthy meals. Her restaurant gained attention following Trader Joe's introduction of frozen kimbap, highlighting the rising popularity of this traditional dish in the area.
"I want people, at least around the San Mateo area, to have a healthy lunch or dinner," she says.
"The name is an amalgamation of 'bibim,' which means mixing in Korean, and mate, as in friend."
