Sunny Park, a former veterinarian, has realized her long-held dream by launching Bibimmate, a ghost kitchen specializing in kimbap, in May 2023. The name, derived from the Korean word for 'mixing' and 'mate' for friend, reflects her intention to serve healthy meals. After testing recipes with her family, Park encourages locals to try kimbap filled with various ingredients like fishcake and kimchi. Her restaurant gained attention following Trader Joe's introduction of frozen kimbap, highlighting the rising popularity of this traditional dish in the area.
"I want people, at least around the San Mateo area, to have a healthy lunch or dinner," she says.
"The name is an amalgamation of 'bibim,' which means mixing in Korean, and mate, as in friend."
