In 2023 and 2024, Cafe Colucci and Brundo Spice Company hosted resident chefs to showcase East African cuisine. In the following year, the program will formalize its selection process, allowing chefs to apply and compete in tastings. The initiative, led by general manager Daniel Yeshiwas, aims to lower barriers for chefs of the African diaspora, who often struggle to find kitchen space to develop their skills. The residency not only provides practical kitchen experience but also aims to address the high rate of restaurant failures among new chefs due to lack of experience and resources.
I really wanted to be able to utilize our space and highlight the up-and-coming chefs in the diaspora. But a lot of times it's really hard to get space to showcase your culinary talents.
Yeshiwas explained that while food is at the core of a restaurant's identity, running a kitchen is complex and many chefs may not get the chance to learn without support.
The Brundo-Cafe Colucci residency will fill the gap for the type of experience needed to maintain a thriving restaurant, addressing the lack of experience many new chefs face.
The cost associated with finding a space for chefs to work on their skills is a barrier for most new chefs, especially in the Bay Area.
