Eli Zabar recalled E.A.T.'s legacy, noting, "My early customers were writers, artists and gallerists. They'd sit in a corner talking for hours. This crowd here tonight reminds me of the same people I had back when I started."
Mr. Zabar emphasized the significance of the celebration with Substack by saying, "I decided to throw the party as a throwback to the cafe's early days, long before a turkey club at E.A.T. cost $32."
Reflecting on the past, Zabar stated, "This area of the Upper East Side was an underdeveloped wasteland. I called them Jean-Paul Sartre and Simone de Beauvoir, highlighting the creative discussions that transpired here."
He humorously remarked while sampling the food, "I snatched an egg salad sandwich for quality control, ensuring our offerings maintain the same standard as when we first opened E.A.T."
