Pule cheese, or magareći sir, is a Serbian cheese made from the milk of the endangered Balkan donkey, considered one of the rarest and most expensive cheeses in the world.
The high cost of Pule cheese is attributed to its rarity, as it is produced at only one farm worldwide, and the milk is labor-intensive to collect.
Balkan donkeys offer low milk yields, producing only one gallon per day for six months, compared to dairy cows that typically yield much more milk.
Pule cheese, introduced in 2012, highlights the challenges in milking donkeys, which have long gestation periods and require complete udder emptying to produce more milk.
