Cedric Maupillier closed his Shaw French restaurant after traumatic incidents involving shootings, leading him to consider leaving the restaurant business entirely. He even imagined a new life teaching skiing or climbing in the mountains. However, when investor Nasr El Hage invited him to head the kitchen at a new French-Mediterranean restaurant in DC named Barbouzard, he decided to embrace the culinary scene once again. His menu includes chilled seafood, Niçoise tarts, escargots, and traditional dishes like daube de boeuf and Dover sole. Barbouzard opens on July 29.
