Mushrooms are high in water content which allows for canning; they can last up to two years unopened but only three to four days once opened.
Canned mushrooms are preserved by destroying microbes, sealing out moisture, and preventing spoilage; they can be frozen for longer shelf life if needed.
To freeze canned mushrooms, drain, pat dry, and store in a freezer-safe bag; they'll maintain quality for about two months when kept below zero degrees.
Freezing changes the structure of mushrooms making them softer; however, they are still safe for consumption after two months as long as kept frozen.
