"CREPES MIX 1 1/2 cups all-purpose flour 1/2 teaspoon baking powder 1 dash salt 2 tablespoons granulated sugar 2 cups milk 2 large eggs 5 tablespoons butter, divided FILLING 1 can Comstock strawberry pie filling or flavor of your choice (21 oz) TOPPING OPTIONS powdered sugar ice cream whipped cream yogurt Combine flour, baking powder, a dash of salt, sugar, milk, eggs, and 2 Tbsp of melted butter. Mix and refrigerate overnight in the fridge (4 hours is the minimum chill time)."
"To cook the crepes, add a small amount of the remaining butter to a 6" skillet. Melt the butter. Pour 1/4 cup of the mix into the medium-high-heated skillet. Cook for about 1 to 1 1/2 minutes until golden brown on the bottom. Flip and cook the other side another 1 to 1 1/2 minutes until golden brown. As they cook, place on a platter and separate with wax paper until ready to fill them. Keep warm."
Batter combines all-purpose flour, baking powder, salt, granulated sugar, milk, eggs, and melted butter and should chill overnight or at least four hours. Cook crepes in a lightly buttered 6-inch skillet using 1/4 cup batter per crepe, about 1 to 1 1/2 minutes per side, until golden brown. Separate finished crepes with wax paper and keep warm. Warm canned strawberry pie filling in the microwave for two minutes and place about 1 tablespoon onto each crepe, then roll jelly-roll style. Serve with powdered sugar, whipped cream, ice cream, or yogurt. Share finished plates on social networks if desired.
