In a large skillet, saute the peppers, onions, garlic, and mushrooms in enough oil that they won't stick. When soft and starting to brown; remove and drain on a paper towel.
I sometimes leave the skin on the potatoes and par-cook in the microwave for about 5 minutes. They cook much faster that way. And the starch makes them brown nicely.
