"Add beef, egg, breadcrumbs, Parmesan cheese, salt and pepper to a small bowl. Mix all ingredients together and form into 8 meatballs. Heat oil in a large skillet over medium high heat and add the meatballs. Brown on all sides for 3 to 4 minutes. Remove meatballs to a plate. Add the green beans, sweet potatoes, pasta sauce and garlic to the skillet. Mix to combine all ingredients."
Combine 3/4 pound 95% lean ground beef, one large egg, 2 tablespoons plain panko breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 teaspoon salt and 1/8 teaspoon black pepper, mix and form eight meatballs. Brown meatballs in 2 teaspoons olive oil over medium-high heat for 3 to 4 minutes on all sides, then remove. Add 2 cups frozen cut green beans, 2 cups frozen sweet potato pieces, 1 1/2 cups no-salt added pasta sauce and four crushed garlic cloves to the skillet and stir. Return meatballs, bring sauce to a simmer, cover and cook 9 to 10 minutes until green beans are tender and meat thermometer reads 130–135 degrees. Divide into two servings. Use frozen or fresh butternut squash as a substitute and any low-sodium pasta sauce as preferred.
