Veselka, a NYC staple for 70 years, was founded in 1954 by Volodymyr and Olha Darmochwal, serving authentic Ukrainian cuisine. Jason Birchard, grandson of the founders, now owns the business, with Justin Birchard also on board as Director of Development.
Starting as a newsstand/coffee shop, Veselka gradually expanded its menu, physical space, and success, with items like pierogi, chicken noodle soup, borscht, and potato pancakes being customer favorites. The restaurant is praised for its hearty, homemade Ukrainian dishes that evoke nostalgic memories for many patrons.
