Carl Radke will open Soft Bar + Cafe at 200 Banker St. in Greenpoint with an official opening on Sept. 17 and service in both morning and evening hours. Radke held two soft launches for friends and family after months of building the space, which features a large bar, arches, stone and marble. The menu emphasizes premium non-alcoholic "soft cocktails" made with functional ingredients such as electrolytes, vitamins, amino acids and collagen. Drinks are designed to produce effects like calmness, focus or a vibey feeling and include negroni-style, espresso-martini-style and Aperol-inspired beverages.
